This Ally Coffee from Guatemala is named for the country's national tree, the Ceiba. In early Mayan and Mesoamerican cultures, the Ceiba symbolized the connection between land and sky. The Ceiba lot from Huehuetenango is a community coffee, investing in sustainable sourcing to benefit a large group of producers. The cup profile boasts a rich floral and berry aroma and is full of chocolate, and cherry, with a creamy body thanks to the specific Huehuetenango terroir.
We roast on Monday and Thursday and ship the next day. All orders placed on Monday or Thursday after 9:00 am will be shipped after the next roast day.

I purchased both the Guatemalan coffee beans and three boxes of the instant coffee for holiday gifts for members of the Rocky Mountain Tibetan Terrier Club. Not a terrier, but a true mountain dog originating in Tibet thousands of years ago. Huge flat snowshoe feet, a big double insulated coat, and a bigger heart and lungs make these Buddhist dogs true mountain companions.
The coffee is rich and delicious with hints of vanilla and plum among other notes that make this an absolutely luscious coffee. Just the perfect drink after a day hiking with your mountain pup.
