Pink Bourbon, a natural hybrid between Yellow and Red Bourbon, doesn’t only have a sweet name. Chemical breakdowns show that it’s got a higher than usual glucose content, giving it a lot of sweetness in the cup, and improving mouthfeel.
This lot went through a unique fermentation style before drying as a natural. After harvesting, the coffee went through a 16-hour aerobic fermentation, followed by a 36 hour anaerobic (hermetically sealed without oxygen) fermentation. Anaerobic fermentation is known for producing very distinct flavor profiles (like strawberry peach margarita!) After this unique fermentation process, the coffee is sun-dried on raised beds for 17-20 days.
Luis Anibal Calderón bought his farm, Finca Villa Betulia, in 2005 but it wasn’t until 2012 that he started planting specialty varieties. His specialty trees include Gesha, Sidra, Maragogype, and this natural hybrid between Yellow and Red Bourbon, Pink Bourbon.
After Luis is done with his meticulous processing, we end up with something pretty special. Drinking this natural Pink Bourbon is like drinking a big, jammy red wine. It’s fruit-forward with notes of strawberry and banana, with a La Croix amount of watermelon in there, and it’s got a big mouthfeel with a finish of sweet fudge.
